Miwa Yamamoto's hand-pulled Miwa somen noodles. The wheat flour used is a choice flour especially for somen. These Miwa somen are created in a cold environment over a period of approx. 36 hours using traditional techniques passed down for more than 1300 years.

Yamamoto's somen are carefully crafted over a period of around 36 hours using hand-pulling techniques passed down for more than 1300 years. Fine somen created using the hand-pulling techniques of a fully skilled somen artisan.
2. Safety: Quality is created through carefully selected natural ingredients and strict management.
In old times and even now, the only ingredients used are wheat, salt, water and a little cottonseed oil. The wheat is a special flour of the manufacturer which brings out flavor in the somen. The salt used is also a special salt that contains lots of minerals. In regards to quality, there are more than 30 items to be tested.
3. Texture: Exquisite hand-pulled somen with a different texture and swallowing sensation.
Yamamoto's hand-pulled somen are only made during the cold period from fall to spring. The noodles are made with a well-balanced reduced salt taste, and by leaving them in the manufacturer's own warehouse during the rainy season to "mature", pleasantly textured somen with firm resilience and sweetness are created.

The finer the somen, the higher the quality. This is because, highly skilled noodle makers are needed to make ultra-fine items, and so they are difficult to make and cannot be made in large volume. Choose the fineness in accordance with your preference.

1.Boil lots of water in a large pot and cook noodles in this. In advance, remove band and spread out noodles when putting in water. Stir gently with chopsticks. (More than 3 liters of water is recommended for 5 bunches of noodles.)
2.Check the thickness of the noodles, and calculate the boiling time at high heat. (Be careful the water doesn't boil over.)
3.After noodles are boiled, strain water and cool using running water while gently washing by rubbing. (Be careful not to burn yourself.)
