Made with generous amounts of Uji matcha tea that is created by the deep river mist of the Uji River and manual work passed down from generation to generation. Clear green, flavorsome soba.
A feature of matcha tea soba is its refreshing aroma and pleasant texture. Delicious whether eaten as zaru-soba or in a soup.

1. Carefully select high-grade tea leaves of Uji
The river mist floats around the Uji River area and gently covers the tea leaves. Only high-quality tea leaves picked in the best season are selected and used for this tea.
2. Traditionally ground with a stone mill
The traditional "stone mill grinding method" has been used for matcha production for many years. The vivid, deep green color can only be created by stone mill grinding.
3. Freshly ground matcha
Carefully-ground matcha has mild umami and a rich flavor. It's delivered in as fresh a state as possible.

[Features of Uji matcha tea]
The fresh greenery of the middle of May... Picking Uji matcha tea starts after around 99 nights have passed (the beginning of May is the 88th day). It is picked when the plant has 5 leaves and the 5th leaf has a sprout.
Quality matcha tea that is used in tea ceremonies etc is carefully hand-picked, not only in ancient times, but also today.
The picked tea leaves are manufactured the same day. They are steamed without rubbing and then dried using a traditional method to create tencha, a raw material of matcha powder.
This is carefully ground using a millstone to create Uji matcha tea.

●Serving Instructions:
①For 2 bunches of soba,​ use a pot with more than 2 liters of water inside. When water has boiled properly,​ put in soba.
②When water comes to the boil again,​ weaken heat so that it doesn't boil over and boil for 3-4 minutes.
③When boiled,​ quickly drain and then rinse to remove slime.
