Japanese ramen is deeply loved by many people around the world, so much that there are even some non-Japanese who say that "Japanese tonkotsu ramen is the best food in the world!" Its popularity knows no bounds and it is the number one food foreign visitors want to eat when they visit Japan.

Enthralling the World, Tonkotsu Ramen
Was it really the result of a lucky accident?

Japanese ramen largely consists of soy sauce, miso, shio and tonkotsu flavor soups, and curled or straight, thin or thick types of noodle. Also, as each region and store has its own unique seasonings accented with various different toppings, there is an infinite variety of flavors to be found.
Among these types, tonkotsu ramen which is said to have been created in Fukuoka, has almost indescribable popularity. It has a rich cloudy soup that captivates all the first time they try it.

However, it is not clear how this tonkotsu soup actually came to be. There are various theories, such as it being created by mistakenly over-heating soup at a high temperature which inadvertently turned out tasting delicious, as well as it being influenced by the rich soup of Nagasaki's famous "champon". Since its creation, famous stores have been established in various places such as Hakata and Kurume.
Be that as it may, there is no difference in the creation of delicious tonkotsu soup which is boiled down over a long time, bringing out lots of collagen! Those who go on a tour of ramen stores are sure to have an endless journey.

What are Hokkaido's 3 main local ramen?

As well as Kyushu, Hokkaido, the northernmost prefecture of Japan, is also famous for ramen. However, it is difficult to lump together all the different types of ramen found in vast Hokkaido. In general, the ramen from the 3 areas of Sapporo, Hakodate and Asahikawa are referred to as "Hokkaido's 3 main local ramen".
Many associate Sapporo with miso ramen, Hakodate with shio ramen and Asahikawa with soy sauce ramen. However, even in the same area, ramen with various different characteristics can be found depending on the store. Most stores also offer the three flavors of miso, shio and soy sauce, so you can compare tastes at the same store.
